The first naturally sparkling wine from the “Fabio Ferracane” agricultural company is born.
Winemaker Fabio Ferracane: “It is a pure Catarratto without added sulphites and an “ancestral” winemaking method
The first naturally sparkling wine from the “Fabio Ferracane” Agricultural Company is born. Produced with the ancestral method, it immediately becomes a candidate to be a revolutionary wine in the field of sparkling wines.
“ The ancestral one - explains the winemaker Fabio Ferracane - is a winemaking method that Sicilian farmers used a few centuries ago when they wanted to produce a wine that did not oxidize and that at the same time maintained its aroma and freshness . ”
This is how, to achieve this goal, the ancestors of our current winemakers, at a time when chemical agents such as sulphites were completely unknown in the field of product conservation, bottled the wine even before the fermentation was finished.
“ Wine bottled with fermentation not yet completed but just begun and without added sulphites – specifies Fabio Ferracane – retains a sugar residue such as to ensure that fermentation develops and is completed practically entirely in the bottle. In a reduced environment, the carbon dioxide that is formed naturally during the fermentation phase remains inside the bottle, making the wine sparkling. ”
The naturally sparkling wine from the Fabio Ferracane Farm (the name is being chosen and will be announced shortly) is produced from Catarratto grapes harvested early in August for a production of approximately 500 litres equal to 700 bottles that will be available for sale from the end of February.
