The naturally moving Catarratto!
“Foddre è…!!!” Literally translated from the Sicilian language… “he is crazy, mad, crazy!” The expression is often pronounced out loud almost like a sentence referring to a person who is not considered normal. Madness can also be interpreted in a positive sense when the “foddre” is crazy because he actually proves to be unconventional, outside the box, in other words whoever is “foddre” can also be brilliant!
Genius and “unruliness” are the distinctive features of this Cataratto wine. The intent was to create a “sparkling” wine without following the “rules” and techniques of modern winemaking normally used to make this type of wine. Inspired by an ancestral winemaking method known to Sicilian farmers of the past, the wine is bottled when fermentation is almost complete, maintaining a minimum sugar residue so that fermentation is completely completed in the bottle. Here, carbon dioxide is formed in a completely natural way and the wine, trapped inside the bottle, begins to “infuse”… goes crazy… as if it wanted to come out of the bottle… becoming slightly sparkling!
“Foddre è…!!!” – Sicilian farmers of the past would shout enthusiastically and amusedly when they removed the cork and the bubbles rose towards the neck of the bottle…
“Foddreè” is a Catarratto wine to be served at 8°-10° C as an aperitif paired with appetizers…a wine to go crazy with…or rather as they say in Sicily…“from “nesciri foddre!!!”
